Brioche Recipe by French Guy Cooking (YouTube)

I’m subscribed to many fantastic channels on YouTube, many of which are food related (of course). The channel ‘French Guy Cooking’ is presented by Alex. If you hadn’t guessed already, he is, unsurprisingly, a French guy who enjoys cooking!! His videos are always fun and make French cuisine look easy. His video for brioche really inspired me to make it myself and I’m so glad I did! The full video for the recipe is below. I have copied and pasted the written recipe from YouTube below too.

When I made the brioche I made a few adjustments to the recipe. I used a 7g sachet of instant yeast instead of the 10g that the recipe states. The 3g difference didn’t seem to make any difference to the end results. 

I started making the brioche dough late on a Friday evening and I only had time for everything until the first rise. For the second rise I didn’t braid the dough but instead cut into 6 pieces and placed them into the loaf tin. I then covered the tin with clingfilm and put into the fridge overnight, taking it out of the fridge the next morning. I waited until the dough had risen slightly above the rim of the loaf tin. This took a while (about 1 and a half hours) but it did eventually and I popped it into the oven with a couple of pain au chocolat. The house smelt beautiful!

I removed the tin from the oven, let it cool slightly but I was so impatient to try it so I only cooled it for about 15 minutes!! It was still warm when I cut it and spread jam over each slice but it was delicious. I made it as part of a ‘full French breakfast’:

In conclusion, I’d recommend this recipe this recipe to anyone with moderate baking skills. Baking is something I really need to improve on because my results are often hit or miss. I would’ve liked a little more volume to the brioche so I think next time I will allow it to rise for a little longer on the second prove. Apart from that, I loved the end result. It even lasts for a few days wrapped in foil partly due to the butter and milk content. Give it a go and let us know how you got on in the comments below.

Ingredients for a BIG BRIOCHE BREAD ( 12 thick slices )

– 500g Baking Flour (strong flour, refined one)
– 2 eggs
– 50g sugar =2 heaped tbsp
– 8-10g salt = 1 tsp
– 10g dry yeast (it’s often mentioned on packages how many grams there are in em)
– or 20g fresh yeast
– 100g butter (again look at the grams on packages)
– 200g (ml) milk ( small glass ) 

Instructions

– Stand mixer, beat flour eggs, milk and yeast until combined.
– Add butter, sugar, salt, then mix thoroughly until smooth and elastic.
– Proof the brioche dough in a covered bowl for 1 – 2 hours, until it did double in size.
– Push down, divide in three, make sausages.
– Braid it in a compact way.
– Place brioche dough in cake tin for the record my cake tin is 30cm or 12in X 13cm or 5in X 8cm or 3in.
– Proof again until risen but not too much ( 20 min or so )
– Temperature is key, warm place to proof is much better.
– Brush with eggwash = 1 egg and 2tbsp milk
– Bake in preheated oven @200°C or 390°F for about 25min or until golden brown.
– Cool down and enjoy.

  1. so I made the recipe today and it was amazing I don’t think I added enough yeast but it came out amazing and so delicious. it didn’t rise well enough to come out like loafs but it was sooooo good.
